Sell More, Waste Less

Food waste is a large global challenge and both governments and industries are stepping up their efforts to reduce food waste worldwide. This research project aims to find ways for supermarkets to increase sales and reduce food wase for perishable items. The ECR working group on On Shelf Availability and Shrinkage initiated this project. In cooperation with three large retailers in Europe empirical data are collected and analysed. Based on recent theory on inventory models for perishable items and these empirical data the improvement potential is quantified.
